Our boat restoration organization is contemplating a 60' or 80' x140' restoration shop. We are looking at timber framing. For estimating purposes, what size of open interiour area is possible and what size timbers would we anticipate needing?

I have seen truss designs that would allow a clear span of 60 feet (seems like a hot topic for a whole new forum) AS to whether they would be cost effective for your application, Im not in a possition to say, nor could I comment on your codes and therefor the scantlings, However I know a man who can!!
Pose your question on the Timber frame engineering section and ask Grigg Mullen
