oak joinery

We are considering cutting our first oak frame. We have cut quite a few frames to date including pine, hemlock, and douglas fir but have stayed away from oak. Assuming that the oak is green what would you all say we should add to the estimated time to cut the frame? 10%, 20%, or more?
