Bald Cypress vs White Oak

I'm planning to build a barn similar to the 13th century GREAT COXWELL Barn of Oxfordshire England. I live in Missouri and have searched the avaliable woods and have settled on two candidates for beams, perlins, and joists: White Oak and Bald Cypress. The sawmills of course will not quarter saw (avaliable trees are not big enough)and white oak when cut green (I'm told) will twist and warp. I then considerd bald cypress and many people say its too soft. Any thoughts? Thanks: James
