One of the things that you need to ask is what is the project. Some companies will have you working on a clients frame and just use you for free labor. Others will have a small project that you can cut to completion and then erect. Depending on what you want to get out of the class. If you are looking for getting the most cutting experience then the first is good. If you want a little bit of a total package then the second is better. I don't have a recommendation as to which of the two workshops you mentioned but, the more you know going in the more you will get out of the class. The Guild has many workshop throughout the year and I find they are a good source of knowledge taught by a variety of folks from many areas of the country. They strive to teach safety, knowledge, and camaraderie.
